A primary water heating with backup
A primary heating with backup
All while being energy efficient, while trying to "stay off teh grid" and be self sufficient.

It’s great that you want to build a home that is sustainable. Everyone needs to build homes that use renewable energy.
You can start by building your own solar panel. It takes a couple of hundred bucks.
As for the water heater, try a solar heater. It will heat water using the sun’s rays.
You can also build your own windmill. It won’t completely take you off the grid, but it can help alot.
